Summertime in Southern California needs little reason to celebrate with Malibu Rum, since any day feels like the perfect day to throw a BBQ bash with dear friends! For my latest day-long celebration, we started with our own cocktail invention made with the refreshing Malibu Lime as we enjoyed some amazing Mexican inspired cooking on the beach-house deck, and ended up down by the courtyard pool.
Malibu Rum has long been known for their amazing tropical taste, and an absolute necessity to any beachy cocktail recipe. There's a reason why they're said to be "Sunshine in a bottle", and we were so excited to experiment mixing with their new Malibu Lime. The hint of lime was so refreshing, and paired nicely with our mango, pineapple, and orange juices. Tip: add a splash of club soda to instantly turn this into a fizzy, delicious cocktail! We named our drink creation: Island Dream - which is so suitable since Malibu Rum is actually distilled on the island of Barbados.
I especially loved that the Malibu Lime was smooth, and played nicely with pretty much any juice that we mixed it with! My friends and I love keeping cocktails simple and organic (we always choose fresh juices over sweet sodas), and our creations did not disappoint. Definitely worthy of several rounds of cheersing!
When it came to food pairing, we decided to go with Mexican cuisine. To keep the island theme, we grilled some fresh Ahi Tuna steaks with traditional steak peppered seasonings and rolled some cheesy chicken enchiladas as an easy side with corn and beans. You would't believe how nicely the Island Dreams paired with the Mexican cooking! We then made our way to the poolside courtyard to relax to some chill music. The awesome thing was, these Island Dreams were so easy to enjoy because they were so refreshing!
The tropical drinks made us feel like we were traveling and actually inspired us to share stories we had about traveling through exotic places around the world such as India, Vietnam, Thailand, Laos, Mallorca, and so many more. From my friends that day, I learned all about the floating rivers in Laos that had zipline swings that dropped you right into the crisp and crazy river! Stories of the beautiful islands in Thailand, reminded me of my innate love for Southeast Asia - especially my home country of Vietnam.One of my friends also boldly declared that the best Mango Lassi on Earth is actually found in Thailand. Mango Lassi is a delicious, sweet blended drink that is a signature of India and I couldn't help but think how fun it would be to make an Indian Lassi inspired cocktail with the tasty Malibu Lime that we had just discovered!
After a few hours of laughing and story telling, the travel tales wound down and we enjoyed our last cocktail before the bash ended. It was a perfect day of food, water, sunshine, and of course - Island Dreams made with the refreshing Malibu Lime!
